produce pix - the Winter Share Winter CSA subscribers are getting produce delivered by bicycle from Dec. through March. Mostly roots and greens. Over-wintering vegetables are a different scene from Summer. When the temperature falls to freezing, the starches in the plants start turning to sugars. Sugars have a lower freezing point than starches, so this is basically a self-defense mechanism. The result is much sweeter flavor. It's been said that parsnips, for example, aren't worth eating if they came from someplace like California where they never got cold. Personally I get quite a thrill from fresh carrots out of the ground in January. Sweet like candy they are!
